Who says you can't edit the "REPLY-TO" field? I do it all the time depending on which email address I want the replies to come to, and depending on whether I need to use my full 'legal' name, my nickname or my user name. My email client allows me to change that and a number of other fields. As for clients which do NOT allow you to change it, simply go into the preferences and change your user information there before writing and sending the email.
As for message headers, well, even for somewhat advanced users, they're still a little complicated to read, and for NON-advanced users, they're like trying to read Chinese with no training. So, maybe this will help you understand why none of these things work that well.
