The mailer can have whatever the hell he wants show up in the reply-to.

While you are right about looking at the message headers, some overzealous spam haters automatically assume that any domain referenced in the body of a spam belongs to a spammer. Spamcop's analysis picks up on this. That's why these attacks can be so effective.
