You need to know how SMTP works

You can have an unknown email address come from some you know. I'll show you how.

First you Telnet to you SMTP server then enter the following

MAIL FROM:
RCPT TO:
data
FROM: Voska
TO: Trollcatcher@here.com
Subject: Unknown Email address from a Know user

Just to show how it's done

Voska
.

This will send and email from me with with an address you may not know but it's from me. The MAIL FROM and FROM can have two differnt email address if you want. You can put anything you like in those fields.
