The main concern is to secure the test lab very tightly - disable internet access, lock up the physical computers to prevent use of flash drives or CD burners, and so on.

As an additional precaution against accidental release, I'd recommend that they make some form of strong authentication (e.g. hard-coded list of Windows serial numbers) mandatory for all student-produced viruses, so that they will refuse to infect any machines other than those in the lab.

Needless to say, both the binaries and source should be destroyed after the class is done.
