Quite simple actually
Most clerks don't pay attention to what goes up on the display or on the reciept. So you just swap the number in RFID with the RFID of a cheaper item and bang you have cheaper goods. Same as switch price tags except that the tag is so quickly scanned that the clerk doesn't even notice the problem.
