Well, Microsoft didn't have control over that
If I remember right, they changed providers to avoid the DDOS, they really didn't have any control over what OS was used for the routing. Besides, I don't think WINE can get IIS to run on Linux, how would Microsoft Manage it in a few days.

Microsoft did have Hotmail running on FreeBSD for the longest time, but they eventually changed over, which was the source of many problems with the service.
