A few points:
1)
There are ways to install patches automatically, in a manner safe for a corporate environment (ie. 300 machines going to Windows Update isn't the answer!) in the newer Windows OSes.

2)
But, if you're using an older OS without these features (or choose not to use them for some reason), personally I'd prefer a small amount of downtime to the alternative of having my machines compromised (of course, this is only in emergency situations.. when viral code is in the wild).

Patching isn't always easy.. but, really, that's what IT people are paid to do (amongst other things). Not patching your machines (I mean, at all.. not the case where you don't have time to do them all) is simply negligent after a reasonable period of time (a few weeks - a month) after the patch has been released.
