You don't have a clue

I can't think of a single labor law that they "get around" by calling an employee a temp as opposed to a permanent or regular employee. They do probably get around paying certain benefits to these people, but so what. Did they shanghai these guys and make them work on their campus at gunpoint?

I suspect that all of the temp employees, whether short or long term, accepted the job knowing the consequences. It is, after-all, a free country, for both the employees and, to a far lesser extent, for the employers. (If you employ anyone in the People's Republic of California, the "free country" concept does not apply to the employers.)

Employment agreements are contracts, whether verbal or written, and subject to applicable contract law. If you don't like the contract, go work for somebody else.
