Easiest way to do encrypted email...
1) Download Thunderbird: http://www.mozilla.com/thunderbird/
2) Install enigmail plugin: http://enigmail.mozdev.org/
3) Install GPG: http://www.gnupg.org/
4) Create yourself a pub/pri keypair.
5) Attach your public key to your messages so your friend can import it. After its set up, all the encryption is transparent. A very small learning curve.

Also, Gaim encryption is the easiest plugin for secure IM: http://gaim-encryption.sourceforge.net/
