Simple protection: Thunderbird or SeaMonkey
It's simple to block this: use thunderbird or a recent version of SeaMonkey. You can block fetching of remote images (and JS execution) within email.

When you enable this privacy feature, SeaMonkey puts up an "Enable Remote Images" button. Inline images are still displayed. It's also handy for stopping spammers from knowing if you opened their spam (which will encourage them to send you more, or sell your address to other spammers as "active").
