What matters most is the resident set size and not the total virtual memory size. The RSS is the portion of the process that needs to be resident (present in the memory of the machine) so that you the process will not experience excesively high paging I/O.

The task manager columns are highly confusing but here is an explanation.

Working Set Mem Usage

Working set is the amount of physical memory that is currently allocated to the process directly and it can be accessed without a page fault. This includes shared pages with other processes. This is why you can't just add up your working sets to find out how much physical ram Windows is currently using. This is equivalent to the resident set.

Private bytes is the total private virtual memory allocated to the process by definition, i.e. may not all be used. In Windows perfmon private bytes is the total private virtual memory committed by the process, i.e. in use right now.

At the end of the day when you look at IE 7's or Firefox's memory usage (working set) it is high but no other process in your system currently needs it anyway. Minimise IE 7 or Firefox and watch the "Mem Usage".
