802.11a/b/g does not support QOS. As such, VIOP packets are
sent with the same priority as data packets. On a lightly loaded
AP this isn't a problem. On a heavily loaded one, it means
dropped or resent packets.

Motorolas Canopy system does support VIOP, allowing you to
sent aside a portion of bandwidth for high priority services.

Just think, for business wanting to go all wireless VIOP (even
internally) could have thier phone services knocked out by 1
rouge AP.
