Actually they are reported
But the site I'm thinking of shows Apache/IIS being compromised in a frequency that coincides with their respective marketshares, and bringing it up would only lead to people like you completely discounting the statistics as bogus...so I'll pass. Besides the statistics don't show the weakness of any platform IMO. They only show the irrelevance of what platform is running.

"I just know that almost every time there's a major security incident, involving theft of credit card numbers and other sensitive data, it turns out to be a site I know to have been running Windows servers."

Again, you come out with an assumption with nothing to back it up. Even if it is true that more IIS sites have been involved in a major incidents, are you asserting that in every case the compromise happened because of some unknown zero day exploit..or was it because some admin forgot to patch the machines, or decided to put "password" as the admin password?

Another thing for you to note. Amongs sites that use SSL, IIS has a sizeable lead in Marketshare over all other server vendors....
