I agree with some of what you said, but there is still something to be said for patching.

Lets use an analogy: Lets say my helmet for my motorcycle is a security patch. Yes, I can still get hurt with my helmet on, but my chances are greatly lessened if I wear it.

I can install other security features on my bike (mine has ABS, for instance), but that doesn't mean I shouldn't wear my helmet. Should I arrive in a dangerous situation where breaking would hurt me (finding myself on a patch of gravel around a blind turn, for instance) then my ABS won't help me.

Obviously, anti-virus, and anti-malware software in general, are necessary nowadays. But they are by definition reactive protection. Security patches are proactive protection. Zero day vulnerabilities, while not unheard of, are rare. But with reactive protection schemes, all threats are essentially zero day.
