Heads up Bubba,

SIP is used for Session Initiation, i.e. finding who's where and setting up the channels. After that you can use essentially any communications protocol, say H.323, to communicate. So chances are one or more of your precious "new VOIP products" actually do use H.323 but use SIP to initiate the connection.
