Marketshare does have some influence, but you also have to consider the underlying structure of the OS in question. Exploits targeted at apache, are targeted at just the apache code, and not necessarily the underlying system architecture. Conversely, most, if not all, of the IIS exploits, don't actually exploit a flaw in the IIS code, but the code for underlying problems in the way the OS itself integrates with IIS, thus most of the IIS flaws aren't really flaws in IIS, but flaws in Windows that get exploited.

Market share is a driving force behind the number, but not severity of attacks. Part of this is due (in my humble opinion) to the number of "script kiddies" out there, who posses no real hacking skills, and instead cut and paste other people's code to craft exploits. Now, since they haven't the knowledge to develop and exploit stuff on their own, they have to rely on what is already out there. Windows having the largest marketshare, there is invariably more trivial exploits written for it for other purposes, i.e. spam, spyware, etc. More snippets, equals easier time for them, so naturally they are going to flock to it. So, it really is market share that drives it, maybe not directly in the case of target marketshare, but the marketshare of the source materials available.
